How exactly does your Spam Filtering System look for spam and eliminate it?

The spam filters examine each message as it comes into our mail server.  The message is searched primarily by the Subject Line.  If there is a word, or phrase, that is programmed into our spam filtering system, the message is rejected and a return message is sent back to the original sending indicating that the message did not go through.
